Baked Zucchini Garlic Parmesan Chips

My husband is out of town working in Salt Lake City, so that means I can make meatless meals and not think twice about it. If given the choice, I would eat vegetarian several days a week. It’s not that I don’t like meat. I love it! I just don’t crave it like I do vegetables and something fresh and green.

I tried these Zucchini Parmesan Chips at Trader Joes on my way home last night, and I fell in love. They are the easiest things to make, super healthy for you, and it’s a great way to eat your veggies.

Baked Zucchini Parmesan Chips take less than 20 minutes too!

Baked Zucchini Parmesan Chips


1 zucchini sliced into 1/4 slices

1 tbsp. olive oil

1/4 cup panko bread crumbs

1/4 cup grated parmesan cheese

3 tsp. minced garlic

salt and pepper to taste

1. Preheat oven to 400 degrees.

2. In a large bowl coat zucchini slices in olive oil, salt, pepper and toss to coat.

3. In a separate bowl mix together bread crumbs, parmesan and garlic. Toss in the zucchini chips coating each one in the mixture.

4. On a greased baking sheet line the zucchini in one layer and bake 18 minutes.

Serve immediately!
